Ingredients
1 ⅓ cups flour
1 small bag of chocolate covered coffee beans (Starbucks has them for one suggestion.)
⅓ cup unsweetened cocoa powder.
1 teaspoon baking powder.
½ teaspoon baking soda.
½ teaspoon of salt.v ½ cup of milk (1% or 2%)
½ cup of strongly brewed coffee at room temperature.
1 stick of unsalted butter at room temperature.
½ cup sugar.
½ cup packed light brown sugar.
1 large egg at room temperature.
3 eggs.
Instructions
Pre-heat oven to 350F.
Use a 12-cup cupcake pan and spray with a non-stick cooking spray or use paper cupcake holders (not both!)
Stir baking powder, baking soda, cocoa powder, and salt in a medium sized bowl.
Combine the coffee and milk in a measuring cup.
Use an electric mixer in a medium sized bowl set on medium high and whip the butter and sugars together until fluffy for approximately 2-3 minutes (this can be done by hand too.)
Add in the egg then alternately mix in the flour and milk mixtures on low speed.
Fill each cupcake holder about half-full or three-fourths full.
Bake at 350F for 16-24 minutes-check at 16 minutes by inserting a clean toothpick in one or two cupcakes. If it comes out clean they are done.
Let cupcakes cool before frosting them. Frost with your favorite frosting-coffee frosting is recommended but vanilla or almost any flavor will work. Top each coffee flavored cupcake with a chocolate covered coffee bean (or more.)
