Mini Hamburger Cupcakes


1 box of brownie mix
1 box of vanilla cake mix
red icing
green icing
sesame seeds


Prepare the boxed brownie mix as directed, but make sure you bake it in a 13×9 pan. This ensures the brownies are thin enough to cut into circles
Remove from oven and allow to fully cool
While the brownies are baking, prepare the cupcake mix
Bake according to the directions for cupcakes, make sure you use cupcake liners (this comes in handy later)
Remove from the pan
Allow the cupcakes to fully cool on a wire rack
Once fully cooled, removed the wrappers
Cut the cupcakes in half
Using a champagne glass, cut “burgers” out of the cooled brownies
Place the “burger” brownie on top of half of the cupcake bun
Top with red icing and green icing to look like tomato and lettuce
Place the top cupcake bun over the icing
Sprinkle sesame seeds overtop


*You can also use a round cookie cutter to cut the “hamburgers” out of the brownies, I just didn’t have one and found that my champagne flutes were the perfect size
*For the icing you can either use an icing pen (which I happened to have at the house) or use store bought and tint it red and green with food coloring. Easy peasy!
